Craft chocolate makers start with premium, carefully sourced cacao beans to make chocolate with exquisite aromas and flavors- also known as terroir in the wine world.
I have been following the high end chocolate industry since Scharffen Berger launched in 1997 and whose eventual buyout in 2005 spurred those who valued the nuanced flavors of single origin chocolate to open their own chocolate factories.
Over the last two decades I have toured dozens of chocolate making factories across the country from small garage workshops to large industrial plants and know many craft chocolate makers personally.
I have been certified in chocolate flavor (three times now!) and am a member of the Fine Chocolate Industry Association, an international group of chocolate professionals dedicated to high quality cacao and fine chocolate making.
I offer guided chocolate tasting experiences and pairings with partner businesses, for private parties and to corporate clients in Charlotte, NC and virtually across the United States.
As a professional educator who has taught at the university level (that PhD is in Neuroscience) I have created experiences to introduce people the the amazing flavors of craft chocolate in an enjoyable and memorable way.
I am humbled and excited to be a part of the growing craft chocolate industry and passionate about sharing the range of flavors possible in fine chocolate with others.
